Paleo Vanilla Mug Cake

Not show favorites over chocolate (although who am I kidding, chocolate cake is the best) I found a recipe for a Paleo Vanilla Mug Cake.  Even though my heart belongs to chocolate, it was also a delicious treat.  The family decided it tasted like a blueberry pancake.  Yum!


Paleo Vanilla Mug Cake
1 Tbs Coconut Oil
1 egg
1/4 cup Coconut Flour
1/2 tsp Baking Soda
1/4 cup water
1 Tbs Pure Maple Syrup
1/4 tsp Vanilla Extract
1/4 tsp Agave
1/2 cup Berries (your preference)
Honey to taste

1. Melt the coconut oil in the mug and swirl it around to coat the mug.
2. Add the egg and beat well.
3. Add the flour and the baking soda and mix well.
4. Add the water, maple syrup, and agave and mix well.
5. Place in your microwave and microwave it on high for about 2 1/2 minutes. Test the top of the cake. If it’s spongy and fairly “dry” on top, you’re good. If it’s moist and sticks to your finger, give it another 15-20 seconds.
6. In a microwave safe dish, add berries and a tsp of honey or agave and microwave until warm (not hot).
7. Turn cake upside onto plate and it should slide right out.  Cover with berries and drizzle with honey per your taste.

    I made it with honey instead of agave because that's what we had and it totally satisfied our cake craving!
