Paleo Banana Bread

This is so delicious!  I think it may be favorite Paleo recipe to date.  I tried it on a few non-paleo friends this past weekend and they all thought it was yummy (one even said it was the best she'd ever had!)

So it is a little complicated, but it is really worth it.


Paleo Banana Bread

3 medium bananas (brown and spotty)
1 1/2 cups of roasted unsalted cashews
1 cup almond flour
2 Tbs walnut oil
2 eggs, whisked
1 Tbs raw honey
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla extract
1/2 tsp cinnamon
pinch of salt


1. Preheat oven to 375 degrees.
2. Add cashews to your food processor to grind down.  Once you get a fine cashew meal, add your oil while your food processor is on until you get a cashew butter.
3. Peel your bananas, roughly break them up, and add to you food processor with cashew butter.  Turn your food processor on and let combine for a minute or so until you have a soupy paste.
4. In a large bowl, whisk your eggs, then add your cashew/banana mixture along with almond flour, baking soda and powder, honey, vanilla extract, cinnamon and salt.  Mix to combine until you get a batter.  At this time you can add carob chips, chocolate chips, or nuts to your taste.  About 1 cup.
5. Grease a bread pan with coconut oil and pour batter into your greased pan.  Place in oven and bake for 25-30 minutes or until bread is cooked through and the top of your loaf has a bit of a "crisp" to it.
6.  Let bread cool for about 10 minutes.
