Paleo Cauliflower Crust Pizza

One thing we thought we were going to miss on the new diet with the new lifestyle was pizza.

WRONG!

Well, at least not after tonight's dinner because we found we don't need to stop eating it!*

Tonight I made cauliflower crust pizza and the slices were filling and delicious.

Paleo Pizza
1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese1 egg, beaten
1 tsp dried Italian seasoning
1/2 tsp crushed garlic
olive oil (optional)
pizza sauce, shredded cheese and your choice of toppings
To "Rice" the Cauliflower:
1. Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater).

2. Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes. There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself.
One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.
To Make the Pizza Crust:
1. Preheat oven to 450 degrees. Oil the cookie sheet with olive oil.

2. In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano and crushed garlic, stir. Transfer to the cookie sheet, and using your hands, pat out into a 9" round. Optional: Brush olive oil over top of mixture to help with browning.

3. Bake at 450 degrees for 15 minutes.

4. Remove from oven. To the crust, add sauce, toppings and cheese. Note, make sure the toppings are hot when you put them on the pizza as the pizza will only be broiled for a few minutes. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).

The whole family loved the pizza and everyone got to choose their toppings. My son and I shared a pizza with spinach, mushrooms, bacon, chicken, and feta cheese. I also made a large "meat-lovers" with sausage, ham, bacon, mushrooms, onions. I multiplied the recipe 3 times (1 head of cauliflower) and there was plenty for 3 adults and 1 toddler (there were 4 slices left).


*Note: we are not cutting dairy out of diet because my family does not have a problem with digesting dairy.
